The Fink Group’s first interstate restaurant continues to forge its way as an industry leader in Queensland. Most recently, OTTO Brisbane was awarded Wine List of the Year and Two Hats at the Australian Good Food Awards 2019, as well as the Best Service award in the Courier Mail Food Awards 2018.
Both OTTO and the Fink Group are supported by a longstanding team of passionate executives and staff. Opening just a short two years ago, OTTO, led by General Manager Alan Hunter and Head Chef Will Cowper, has forged its way as one of Brisbane’s most popular, successful and consistent performers.
Alan Hunter began appreciating fine wine from a young age, his career heavily influenced by an upbringing in restaurants and his parent’s keen investment in a South Australian-centred wine cellar. Working at a number of award-winning restaurants in Brisbane, Alan quickly emerged as a leading sommelier and in 2013 was announced at the Queensland Good Food Guide as the Pol Roger Sommelier of the Year.
Alan’s talent for communicating wine in restaurants was recognised by Courier Mail’s QWeekend editor Kylie Lang, to which he was appointed as their new weekly wine columnist in 2013. In 2016 Alan was recruited by the Fink Group to be the resident sommelier at their Queensland venture, OTTO Ristorante Brisbane. A natural leader, Alan was quickly promoted to Restaurant Manager in 2017, before being made General Manager in 2018. Alan has taken OTTO from strength to strength, and this year the restaurant was awarded Wine List of the Year and Two Hats in the Good Food Guide.
William Cowper is Head Chef at OTTO Brisbane. OTTO serves the food that people love to eat; Italian cuisine using fresh seasonal ingredients, with Will’s menu at OTTO Brisbane taking influence from the southern regions of Italy to suit the warmer Queensland climate.
Originally from Sydney, Will worked for a number of years at OTTO Sydney as Senior Sous Chef, assisting Head Chef Richard Ptacnik to maintain and expand the restaurant’s enviable culinary reputation.
In 2015, Will was asked to lead the kitchen team at OTTO Brisbane, and eagerly accepted the Head Chef position at Fink Group’s first interstate restaurant. In truly embracing the move to Queensland, Will has developed close relationships with local producers, working alongside them to ensure OTTO uses the best quality ingredients available.
Creative Director, Fink Group
John Fink is a restaurateur, a writer and a filmmaker. As Creative Director of the Fink Group, John runs the family restaurant business with his father, long-time restaurateur, theatre-owner and hotelier Leon Fink.
Most days, John can be found at one of his restaurants, ensuring they retain their place as Sydney’s most loved dining establishments, or at the group’s head office in Surry Hills planning his next big thing, all the while keeping a watchful eye over the engine room of the business.
When he finds time, John also works on this personal slate of scripts and films, a passion and talent he undoubtedly inherited from his mother, the prominent Australian film producer Margaret Fink. At home in Clovelly, down time is shared with his partner Estelle, and newborn son Elliott, tending to his vegetable garden and chooks, or cooking up a storm for one of his famous paella parties.
