Richard Ptacnik is the Executive Chef at OTTO Ristorante, heading up the team who day in, day out deliver the food that Sydney loves to eat at one of its most famous locations.

Richard worked with some of Europe’s great chefs in Berlin, Switzerland and his native Prague before moving to Australia and joining OTTO in 2003 where he worked as James Kidman’s sous chef for five years, assuming the role of head chef in late 2009.

Richard’s food style is unashamedly simple – modern Italian with roots firmly placed in the classics. For many it has come for many to signify the quintessential Sydney cuisine; fresh, seasonal, produce-driven, sourcing the finest ingredients and letting them speak for themselves.

OTTO is one of Sydney’s most popular, successful and consistent performers. In 2014 OTTO was awarded one chef’s hat by the 2015 Sydney Morning Herald Good Food Guide and the Australian Gourmet Traveller Restaurant Guide has placed OTTO at number 59 on its list of the Top 100 Australian restaurants for 2015.




Graham Ackling is the Restaurant Manager at OTTO Ristorante and a true hospitality professional who believes in the important balance of seamless service and exquisite food quality. Graham can often be quoted as saying “It is all in the delivery”.

With a background in finance, Graham commenced his hospitality career in Sydney as the Food and Beverage Manager for Havana Joes Tavern and Restaurant, a leading Sydney Hotel.

Looking for a new challenge Graham spent several months travelling through Europe experiencing different cultures and cuisines, before recommencing his career in London. There, Graham was selected to join the Conran Group’s flagship restaurant The Butlers Chop House which overlooks the London Tower Bridge. At the Conran Group he was trained in the Conran Service Methodology, which is based on superior personalised service and product knowledge.

Graham’s silver service skills were then honed in two of London’s most prestigious restaurants Palio Bar Restaurant and City Rhodes Restaurant where he excelled as a Head Waiter and then as an Assistant Manager.

Seeking blue skies, Graham found himself in Auckland for several years where he successfully managed two award winning restaurants, G.P.K. and Hammerheads Seafood Restaurant.

Returning to Sydney in 2003, Graham commenced a position with OTTO as Senior Waiter / Maitre’d. In November 2005 Graham was appointed to his current position as the Restaurant Manager of OTTO.




John Fink is a restaurateur, a writer and a filmmaker.

As Director of the Fink Group, John runs the family restaurant business with his father, long-time restaurateur, theatre-owner and hotelier Leon Fink. The Fink Group own and operate Quay – the most awarded restaurant in Australia and iconic waterfront Italian eatery OTTO Ristorante on the Finger Wharf at Woolloomooloo.

John can be seen most days at OTTO, ensuring that the restaurant retains its place as one of Sydney’s best-loved dining establishments. He has also in recent times pioneered exciting new dining and bar pop-ups on the wharf to capitalize on Sydney’s love of casual dining, and is always on the lookout for the “next thing”.

In his role managing the restaurants for the group, John oversees a team of 160 highly skilled restaurant professionals, as well as controlling operations and marketing for the group.

John also works in his “spare time” on his personal slate of scripts and films, a passion/talent he undoubtedly inherited from his mother, the prominent Australian film producer Margaret Fink.

John lives in Sydney with his two children and is an enthusiastic supporter of charities such as Cure Cancer Australia and Voiceless, along with cultural entities like the Griffin Theatre and the Sydney Theatre Company.
