When I lived in Sydney, we used to always have Sunday dinner at home with the whole family. I absolutely loved coming together around the table with everyone once a week. One dish we would often have is moussaka – one of my favourite comfort foods. My Yiayia used to cook it, and now it is something my Mum loves to cook for our family too. Luckily for everyone, she was happy to share the recipe!
2 medium sized eggplant (thinly sliced)
4-5 medium sized potatoes (thinly sliced)
500gm Lamb or Beef mince
1 onion (finely chopped)
150gm grated Parmesan cheese
1/3 cup plain flour
Step 1 – Mince sauce
Brown onion in olive oil until tender. Add mince, cook until brown. Add passata, salt & pepper. Bring to boil, then simmer until mince is cooked and sauce is thick.
Step 2 – Vegetables
Toss sliced potato in olive oil and cook on BBQ (for smoky flavour) or skillet until almost cooked through. Drizzle olive oil over sliced eggplant and cook on BBQ or skillet until almost cooked through.
Step 3 – Béchamel sauce
Melt butter, add flour until well combined. While whisking, milk gradually to prevent lumps. Add a pinch of nutmeg and simmer until thick. Take off the heat and cool slightly before adding the eggs. Mix well.
Step 4 – Layering (30 x 20cm deep dish)
Potatoes > sprinkle half the grated parmesan > eggplant > mince sauce > potatoes > remainder of grated parmesan > eggplant > béchamel sauce
Bake in moderate oven until brown (approx. 1 hour). Serves 8.
