In celebration of OTTO being crowned Wine List of the Year in Good Food Guide 2019 and Best Wine List in QLD by Gourmet Traveller Wine, Sommelier and General Manager, Alan Hunter has curated a series of regional wine dinners. A culinary journey through some of our favourite Italian regions will showcase Alan’s top drops matched to a curated menu by Head Chef Will Cowper.
The first stop will be one of Italy’s most loved wine regions, Tuscany. Tuscany is the birthplace of Italian cuisines as we know it today, and is renowned the world over for its simple and delicious food. On the wine front, it’s home to the some of the world’s most notable wines. Our intimate dinner will journey through five courses, each matched with a wine that highlights the strengths and flavours of the region.
The Chianti Classico, the king of Tuscan wines, is produced in the hills between Florence and Siena, is said to have been the first officially established wine zone in the world, dating back to 1716. Alan has chosen Castelvecchio ‘Santa Caterina’ Chianti to feature alongside Will’s Fagioli con salsiccia, a typical dish of braised beans, Italian pork sausage, cime di rapa. Then there is the famed Vin Santo, a wine that is loved for its intense flavours of hazelnut and caramel. When paired with biscotti, Vin Santo becomes “Cantucci e Vin Santo” which is inarguably Italy’s most famous welcoming tradition. Here Will Cowper takes the pairing to the next level, creating a Vin Santo and biscotti Semifreddo.
